 Red Oak is an open grained wood and honey would absorb into the wood.  White Oak or hard maple would be a better choice of wood. Both are closed grain and hard.  Hard wood would provide stronger finished edges with sharp tools.

I agree with Rich. Red oak is rather poor for delicate items. RO requires very very sharp tools to cut the dipper grooves.  Poplar or even maple would be a better choice.     -raasch

That looks like red oak. Not my favorite wood to turn, but I think it would be OK for your honey dippers.
